The recent news of an exploit for the help: URI handling on the Mac underscores how difficult it can be to change the MIME handlers under OS 10.X.
Internet Explorer (if you still have it installed) can manipulate them, but nothing in the OS interface lets you directly manipulate the mappings and handlers. Carl Lindberg has released a nice Pref Pane (RCDefaultApp) that lets you manipulate these settings as a control panel.

Blacktree’s Quicksilver.
It has completely replaced my TigerLaunch menu and is in danger of being my one true crutch. Check it out and set it up. I’ve set it up so that it indexes a large subset of my home directory. In particular, the rsync’d copy of all the RFCs. It is a thing of beauty to be able to type:
Command-Space 3 2 6 1 Return
and have RFC 3261 pop up for me. Joy!. The integration with the Address Book has also replaced another app I was using to quickly look up contacts. I’m all in favour of reducing the number of applications I use, so this is outstanding.
